So, after treating myself to Specialty's for lunch and having a peanut butter cookie...I'm jonesing for more peanut butter cookies. Soft, chunky, chewy ones! I've got a good recipe for them WITH chocolate chips, but I'd like one that's even softer and chewier (or I'd just take out the chocolate chips!).

It goes something like this (and is totally not good for you):
Preheat oven to 350F.
1+1/3 cup melted peanut butter
2/3 cup melted butter
1+1/3 cup brown sugar
2/3 cup white sugar
teaspoon of salt
teaspoon baking powder
Mix above ingredients. Add flour until it becomes the right consistency (ie, it feels like cookie dough). I seem to remember this is around 4 cups. Add a cup at a time until it feels right, and makes nice spheres when rolled, but doesn't crack. For softness, you want this *slightly* on the moister side, rather than on the dryer side of dough. (Unfortunately, this is the best description I have for this part, I do this one by feel, which is probably what makes it chewy.).
Roll into balls about 1" in diameter and put on a butter-greased cookie sheet. (you'll probably need two cookie sheats).
Press down balls with a fork.
Put in oven, and take out the moment that the tops start to get that Golden Colour (again, this is done by feel :P, I think this is around 12 minutes).
